Bacon and Egg Muffins

Gluten free, grain free, clean eating, paleo, primal, low carb

 

These bacon and egg muffins, one of Kyra Williams Fitness’ clean eating recipes, are a great batch cooking recipe for breakfast on the go.

 

 

Ingredients:
12 large eggs
12 pieces nitrate free, uncured bacon
1/2 cup red pepper, diced
1/2 cup green pepper, diced
1/2 cup red onion, diced

 

Directions:
Preheat over to 350 degrees.
Cook bacon your favorite way, I fry it then set it on paper towels to let all the grease soak off the bacon before I crumble it up.
Place liners in each of the muffin cups.
Beat eggs in a medium bowl, adding the rest of the ingredients and mixing.  Pour mixture into muffin cups.
Bake for 18 – 20 minutes.
