South American Bowl

Clean eating, gluten free

Change the protein in this bowl to mix and match the flavors.

 

 
Ingredients for the Aji:
1 head romaine, trimmed and torn
1/2 bunch fresh cilantro
5 green onions (including white parts)
2T parmesan or cojito cheese
4 T mayonnaise
2T sour cream
2 jalepenos, remove seeds and membrane
2 garlic cloves
1 tsp salt
1/2 tsp pepper
1tsp lime juice
2T olive oil
1/2 tsp white vinegar

 

Ingredients for the Bowl:
4oz cooked flank steak
2/3 cup baby bella mushrooms, sliced
1/2 cup asparagus spears
1/2 cup cooked corn kernels
1 radish, thinly sliced
1/4 uncooked quinoa
1T olive oil
Salt and pepper to taste

 

Directions:

Cook steak to your desire, any way you choose.
Cook quinoa as directed.
Sauté mushrooms and asparagus in olive oil, with salt and pepper until the asparagus is fully cooked, but still crispy.
Place quinoa in bowl and add salt and pepper. Then top with veggies, steak and Aji.
