Cottage Cheese Bake Muffins

 

Similar to the cottage cheese bake, this clean eating recipe is very portable and very high in protein. It is great for someone on a low carb diet.

 

vegetarian, clean eating
Ingredients:
1 container (16 oz) 2% cottage cheese
12 oz bag  chopped broccoli, thawed and drained
3/4 cup 2% shredded cheddar
1 jar (7 oz) roasted red peppers, drained and chopped
4 eggs beaten
Directions:
Mix all ingredients in large bowl.
Line muffin tray with liners or spray with cooking spray and distribute mixture evenly.
Bake at 350 degrees for 45 minutes or until cooked through.  Let stand for 10 minutes before removing muffins.
