Quinoa Veggie Bowl
This clean eating, vegetarian, vegan, low carb, gluten free, grain free, dairy free recipe will help you add more veggies into your life!
Ingredients:
Quinoa
1 cup quinoa
1 tsp olive oil
1/4 tsp salt
1 1/2 cup boiling water
1T olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
1 cup diced orange pepper
1 cup diced zucchini
1 cup corn kernels
1/4 tsp salt
2 tsp ground coriander seeds
2 tsp ground cumin seeds
1/2 tsp red pepper flakes
1 cup chopped tomatoes
1/3 cup chopped fresh cilantro
1/4 cup sunflower oil
3T lime juice
Directions:
Make the dressing by combining 1/4 cup sunflower oil and 3T lime juice.
Boil water in a pot.
In another pot, heat 1 tsp olive oil on medium. When this oil begins to simmer, add your cup of quinoa and try to get the oil all over the quinoa. Then once the water is boiling in that first pot, pour that over the quinoa. Stir it all up for one minute to let it return to a boil, then reduce to low and let it simmer for 10 – 15 minutes. You can also add the 1/4 tsp salt here.
In a pan, heat one tablespoon of olive oil on medium, then add your onion, garlic, pepper, zucchini and corn. Cook for about five minutes, until tender. Reduce heat then stir in the 1/4 tsp salt, 2 tsp ground coriander seeds, 2 tsp ground cumin seeds and 1/2 tsp red pepper flakes. Let it sit for another three minutes on low.
Remove the veggies from the heat and stir in quinoa and the dressing. If you serving warm go ahead and add in the 1 cup chopped tomatoes and 1/3 cup chopped fresh cilantro. If you serving cool, let the quinoa cool, then add those.
