Roasted Eggplant

I’m totally addicted to this. It’s so buttery but it’s not.. I can’t believe it’s not butter…. eggplant??? Should that be the title?
Ingredients:
1 whole eggplant
4T olive oil
salt and pepper to taste
Directions:
Slice the eggplant into about inch wide slices, then cut into fourths. Toss in olive oil. Sprinkle salt and pepper, as much as you want, then bake at 350 degrees for about 30 minutes or until brown and tender, almost crispy.
