Beef, Bacon and Butternut Squash Bowl

This Beef, Bacon and Butternut Squash Bowl, one of Kyra Williams Fitness’ clean eating recipes, is the lazy-man’s version of the Civilized Caveman’s recipe found here:

Ingredients:
1 whole butternut squash
1 pound grassfed beef
6 pieces bacon
2 whole red onions
4 T coconut oil
Balsamic vinegar to taste (optional)
Directions:
Cook butternut squash by cutting in half and baking facedown in a baking dish with about a quarter inch of water at 450 degrees for about 45 minutes or until the squash is fully tender then scoop out the guts. Or slice the guts into chunks and boil until tender.
Slice onions into quarters and place into a deep frying pan with coconut oil. You can also add balsamic vinegar, but I don’t really like it, so I put one onion in one pan with just coconut oil and the other onion in another with the balsamic for my bf. Cook over medium heat in covered pans until the onions turn dark brown and are tender, or are caramelized.
While squash is cooking and the onions are caramelize , fry bacon, then remove bacon from pan and break into tiny pieces. You can leave all of the grease, but I like to strain most of it, leaving a light coating on the pan, then I use that pan to cook my beef.
After the squash is fully tender drain the water and place in a giant bowl and mash. Add beef and bacon and mix together. Serve with onions on top.
