Balsamic Chicken and Brussels Sprouts

 

Clean eating, gluten free, low carb

All of the carbs from this recipe, Balsamic Chicken and Brussels Sprouts, one of Kyra Williams Fitness’ clean eating recipes, come from the veggies. If you train in the morning and don’t need carbs at dinner, then this is perfect. If you train in the evening, add some rice or quinoa to this meal. Also, you don’t have to use fat free feta, or any feta at all. Just know if you use full-fat feta it will increase the fat intake, but there’s not a lot of feta in the entire recipe so it won’t throw off the macros by much at all.

 

 

Ingredients:

16 oz chicken breast (about 2 – 3 breasts excluding refuse)

8 cups brussel sprouts

2 orange peppers, chopped

1/2 cup water

1/4 onion, chopped

8 T fat free feta

8 T balsamic vinegar

4 T olive oil

1 T garlic powder

1 T oregano

 

 

Directions:

Cut fat and tendons from chicken breast and then cut into small, “nugget” size pieces.

Chop peppers and onion.

Add all ingredients to slow cooker and cook on low for about 4 – 6 hours.
