Bison Burgers with Sweet Potato Mash

Clean eating, Paleo, Primal, gluten free, grain free, dairy and lactose free

 

 

This is one meal that I’m famous for in my house. It’s so easy to make and you don’t even have to get that many dishes dirty.  Bison Burgers with Sweet Potato Mash, one of Kyra Williams Fitness’ clean eating recipes, is higher carb and low fat, so it’s a perfect dinner for after you’ve lifted, and it’s so easy to bring with you for lunch the next day. Toss the burger on a salad and omit the sweet potato if you are looking to keep it low carb.

 

 

Ingredients:

1 pound ground bison

1 pound sweet potatoes

1/2 cup finely chopped mushroom

1/2 cup finely chopped onion

1/4 cup unsweetened coconut milk

2 tsp. truffle oil

1 tsp garlic powder

1 tsp Italian seasoning

Cinnamon to taste

Salt and pepper to taste

 

 

Directions:

Start the sweet potatoes first. They will take the longest. You can fork them (put a bunch of holes in them) and wrap them in wet paper towels and microwave until they are tender all the way through, or boil them, then skin them.

Mix all ingredients except sweet potato and coconut milk and pat into 4 patties.  Fry on pan over medium-high heat, broil or grill. Cooks like beef so it’s okay if it’s pink in the center.  I personally use a George Foreman grill.

While those are cooking and my taters are cool enough to handle, I skin them and put them in a food processor/ high quality blender with cinnamon and coconut milk and mix thoroughly. You can do this by hand too, try to whip them up though.

Also, truffle oil isn’t a must. Most people don’t keep that on hand, but I am telling you, it’s delicious!
