Chicken, Sweet Potatoes & Shallots

 

Chicken, Sweet Potatoes & Shallots, one of Kyra Williams Fitness’ clean eating recipes,  is clean eating, paleo, primal, gluten free, grain free, lactose and dairy free.

 

 

Ingredients:

4 (4 oz each) boneless, skinless chicken breasts

4 shallots, sliced into thick rings

1 1/2 lbs sweet potatoes, peeled & cut in 2″ pieces

4 Tbs olive oil

2 Tbs roughly chopped fresh rosemary

Salt and pepper to taste

 

 

Directions:

Place sweet potatoes in a large pot.  Add enough cold water to cover and bring to a boil. Add 1 tsp salt, reduce heat, and simmer until tender, 14-16 min.   Reserve 1/4 c. of cooking water, drain sweet potatoes and return to pot.  Mash with reserved cooking water.

Meanwhile, heat 1 Tbs oil in large skillet over med. heat.  Season chicken with 1/2 tsp salt and 1/4 tsp pepper and cook until golden brown and cooked through (7-8 min per side).  Transfer to plates.

Wipe out skillet and heat remaining 3 Tbs oil over med-high heat.  Add shallots, rosemary, 1/2 tsp and 1/4 tsp pepper.  Cook, stirring until shallots are tender (3-4 min).  Serve over the chicken with potatoes on side.
