Egg Salad Wrap

 

Clean eating, vegetarian
This brings me back to the days of eating out of a lunch box in a school cafeteria.  This version of an egg salad wrap, one of Kyra Williams Fitness’ clean eating recipes, is packed with protein, is clean eating approved and yummy.  You should try putting it in your kids’ lunch boxes too!

 

Ingredients:
2 Joseph’s Whole Wheat and Flax pita
4 large hard boiled eggs
1 cup baby spinach leaves
1/2 cup fat free cottage cheese
1/4 cup chopped celery
2 T chopped onion
2 T mustard
1 T garlic powder

 

Directions:
Boil, peel and chop egg into small pieces.
Mix all ingredients together except spinach and wraps.
Spoon egg mixture into each wrap, topping with spinach leaves.
