Italian “Stuffing”
Make this gluten free Italian Stuffing, one of Kyra Williams Fitness’ clean eating recipes, by using gluten free breadcrumbs or omit them all together.
Clean eating, Paleo, Primal, Gluten free, grain free
Ingredients:
1 pound grassfed beef
1/2 pound ground Italian sausage
1 can (14.5 oz) diced tomatoes
2 medium zucchini squash
1 eggplant
1 red onion
4 T olive oil
4 T gluten free bread crumbs
2 T Italian seasoning (Marjoram, Thyme, Rosemary, Savory, Sage, Oregano, And Basil)
2 cloves garlic, minced or 2 T garlic powder
Sea salt to taste
Fresh grated mozzarella cheese to taste as garnish
Directions:
Chop vegetables coarsely.
Mix all ingredients in a large skillet and cook over medium- high heat until meat is cooked through and vegetables are tender.
