Stuffed Peppers
Gluten Free. Low Carb. Clean Eating.

For when you are craving Mexican but want to keep it healthy try these stuffed peppers, one of Kyra Williams Fitness’ clean eating recipes.

 

Ingredients:
1 pound grassfed ground beef
1 pound ground sausage
3 whole red peppers
3 whole green peppers
1 whole tomato
1 cup aged cheddar cheese
6T Mexican Seasoning of choice

 

Directions:
Preheat over to 350 degrees and fry beef, sausage and mexican seasoning until all meat is thoroughly cooked and there is no pink.
Slice tops off of peppers and gut. Dice tomato.
Place peppers in baking dish with the open side up, then “stuff” peppers with meat then top evenly with cheese.  Bake at 350 for 15 minutes so cheese is thoroughly cooked.
Top with diced tomato and serve.
