Mango & Pepper Mahi

Want this Mango & Pepper Mahi, one of Kyra Williams Fitness’ clean eating recipes, but didn’t get a workout in? Easy! Use a full Tablespoon of coconut oil while cooking the fish and omit the rice and have a salad so it’s low carb, but full of flavor.

 

Ingredients:
1 Mahi Mahi filet (3 oz)
1/2 cup sliced mixed peppers
1/2 cup diced mango
1 tsp coconut oil
1/2 cup white rice
Old Bay seasoning, to taste

 

Directions:
Place all ingredients in pan, sprinkle with Old Bay and fry, mixing often, until fish is cooked all the way through.
Serve over steamed rice.
