Maple-Mustard Salmon
Clean eating, gluten free, dairy and lactose free.
High in carbs, this Maple-Mustard Salmon, is one of Kyra Williams Fitness’ clean eating recipes, definitely a better choice after a workout. But you can easily make this as a dish for one with microwave rice and just one salmon filet. I’m not a huge fan of having fish again the next day but it can also be brought to work the next day with a salad.
Ingredients:
4 four oz fresh salmon filets
2 cups brown rice
1 cup pineapple chunks
½ cup maple syrup
2 tablespoons Dijon mustard
1 small jalapeño, diced
Salt & pepper to taste
Directions:
Whisk syrup & mustard in a small sauce pan over medium heat. Bring to boil then simmer until thick and remove from heat.
I have my salmon cut into filets & I have them remove the skin because it’s gross to me. So I place my salmon filets into a foil lined baking dish, adding salt & pepper.
Spread pineapple & diced jalapeño all over salmon.
Brush salmon with syrup mixture, pouring extra into baking dish.
Broil on high for 5 – 7 minutes.
Serve over brown rice with extra syrup.
