Carrot Coins

A side at lunch or dinner, or extra something for a salad. Just double, triple or quadruple the recipe.. the nutrition facts are for 1 serving.

Clean eating, gluten free, grain free, vegetarian, vegan, dairy and lactose free

Ingredients:

1 cup quarter-inch thick sliced carrots

1 Tablespoon coconut oil

Cinnamon to taste

Directions:

Slice carrots in 1/4 inch thick coins, place in a large bowl & toss with melted coconut oil. Sprinkle cinnamon and then mix until well coated.

Spread in a single layer on a baking sheet and roast for 25 –30 min or longer, until tender & slightly browned.
