Bison Sausage with Spaghetti
Low carb, paleo, primal, gluten free, grain free, dairy free, clean eating recipe
My bf and I stumbled upon bison sausage one day at this fancy market. It was AMAZING. This is how I prepared it. It’s such a clean, fresh taste with a ton of flavor even though it is really lean.
Ingredients:
8 ounces bison sausage
1 large tomato
1 spaghetti squash
2T olive oil
.25 large red onion
2tsp dried basil
Directions:
Prepare spaghetti squash in oven, – poke a ton of holes in it, place it on a baking sheet and back at 400* until it’s soft, which should take about an hour. Then remove from oven, cut lengthwise and remove seeds.
Add olive oil to pan on medium heat then add sausage. We had two sausage links and I cut each into quarters. Begin cooking as you chop the tomato and onion coursely, then add those to pan with dried basil.
Let simmer with cover until bison is fully cooked, about ten minutes.
Place about a cup of spaghetti squash on your plate, then add the rest on top and serve that way.
