Chicken & Mint Salad
Clean eating, low carb, grain free, gluten free, paleo, primal, dairy and lactose free
Do you love cold slaw? How about chicken salad? Do you also love having a flat tummy? Try this Chicken & Mint Salad, one of Kyra Williams Fitness’ clean eating recipes, instead of the deli bought version loaded with fat.
Ingredients:
14 oz cole slaw (shredded cabbage, carrots)
12 oz chicken breast, cooked plain
6 Tablespoons of fresh mint leaves
1/2 large onion, diced
1 clove garlic, minced
4 1/2 Tablespoons Vietnamese or Thai fish sauce
4 1/2 Tablespoons lime juice
4 1/2 Tablespoons olive oil
2 Tablespoons stevia
Black pepper to taste
Directions:
Cut off excess fat from chicken and bake at 350 degrees, plain. When cooled, shred into small pieces.
In a bowl, combine the garlic, sweetener, vinegar, lime juice, fish sauce, oil, onion and black pepper. Put to side. In another bowl, mix cole slaw, mint leaves and chicken and toss. Mix up the sauce, then slowly pour it in while continuously tossing the salad until the cole slaw/ chicken mixture in combined well with the sauce.
