Cilantro Turkey Burgers
Clean eating, Paleo, Primal, low carb, gluten free, grain free, lactose and dairy free
Cilantro Turkey Burgers, one of Kyra Williams Fitness’ clean eating recipes, are simple, clean & delicious. Low carb, high fat, not for after a workout, but best when you do not want an insulin release from your body.
Ingredients:
1 pound 99% fat free ground turkey breast
1 whole eggplant
1/4 cup chopped fresh cilantro
1/2 cup finely chopped red onion
4T olive oil
2 tsp. minced garlic
2 whole avocados, sliced
1 tomato, sliced
salt and pepper to taste
Directions:
Start the eggplant first because it will take the longest. Set over to 350 degrees and spray baking sheet with olive oil cooking spray. Slice the eggplant into 1/2 – 1 inch thick slices, then quarter. Toss eggplant in a large bowl with 2T olive oil, salt and pepper. Place in oven and start the burgers.
Combine the rest of the ingredients in a bowl. Combine ingredients into a ball, make sure it’s all mixed together. Then pat out into four patties, and fry, grill or broil. I use the George Foreman but you can cook however you like. Make sure they cook all the way through – this is poultry.
I personally like to serve this with half a sliced avocado and a couple of slices of tomato. The sliced tomato is self explanatory, but for the avocado, cut in half lengthwise, remove the seed, then while still in shell, slice 4 or 5 times, lengthwise again, then scoop out off shell with fork or spoon and lie over top of the burger.
