Coconut/ Macadamia Nut Crusted Chicken

 

 

These Coconut/ Macadamia Nut Crusted Chicken, one of Kyra Williams Fitness’ clean eating recipes,  are Clean eating, grain free, gluten free, paleo, primal, lactose and dairy free.

 

 

Ingredients:

Cooking spray
4 Skinless chicken breasts
4 oz macadamia nuts, chopped
¼ cup unsweetened flaked coconut
1 egg, beaten

 

 

Directions:

Preheat oven to 400. Coat a baking sheet with cooking spray. Mix macadamia nuts and coconut. Coat chicken breasts in egg then coat in coconut and macadamia nut mixture. Place chicken on baking rack for 45 minutes or until cooked through.
