Cottage Cheese and Bacon Stuffed Chicken Breasts
These Cottage Cheese and Bacon Stuffed Chicken Breasts, one of Kyra Williams Fitness’ clean eating recipes, are Clean eating and part of a low carb diet.
I know I say it makes 3 servings, but you’ll probably have leftovers. It’s a lot of food. It’s good food. But it’s still a lot of food.
Ingredients:
3 chicken breasts
12 ounces fat free cottage cheese
6 organic bacon slices
6 spinach leaves, chopped
1/4 chopped red onion
3 tablespoons red pepper flakes
3 teaspoons garlic powder
Directions:
Cut excess fat & tendons off of chicken
Cut a “hole” in the breast so you can “stuff” it, basically. (I ended up essentially “wrapping” mine.)
In a large bowl, combine cottage cheese, spinach, onion, red pepper & garlic and stir with fork.
Use stuffing to put in chicken.
Bake at 350 for 40 minutes, or whenever they’re done.. all ovens are different!

How did I miss that? Cook it and add it to the cottage cheese mix!
