Eggplant Stuffed Meatloaf

Need more veggies in your life but sick of stuffing your face with broccoli? I have a solution… Eggplant Stuffed Meatloaf, one of Kyra Williams Fitness’ clean eating recipes.

P.S. This recipe takes 13 minutes to prepare, 45 minutes to bake.  Just enough time to get in a workout!

 

Ingredients:
1 package (20 oz) 99% lean ground turkey breast
1 medium zucchini squash
1 eggplant
1/4 red onion
4 T olive oil
2 cloves garlic, minced or 2 T garlic powder
2 T onion powder
1 T sea salt

 

Directions:
Slice zucchini, eggplant and onion then process in food processor very finely.
Mix all ingredients in a large bowl and spread evenly into a baking dish.
Cook at 400 for 45 minutes.
