MEATzza

 

In the winter we have this about once a week. All veggies, no bready crust, this Meatzza, one of Kyra Williams Fitness’ clean eating recipes, keeps the carbs low, healthy fats high and will leave you full and satisfied all evening.

Clean eating, gluten free, grain free

 

Ingredients:
16 oz ground grassfed beef
4 cups cauliflower
4 cups zucchini, sliced
1 cup tomato sauce (no salt added)
1 cup parmesan cheese (or cheese of your choice – or none at all!)
1 cup diced tomato  (canned also works, no salt added)
1 cup fresh mushrooms
4 T olive oil
1/2 cup diced onion
4 T garlic powder
6 T Italian seasoning
Handful or two of fresh basil, chopped

 

Crust Directions:
Spray cookie sheet(s) with cooking spray.
Steam and process (in food processor) cauliflower.  Slice and process zucchini.  Add both to bowl with beef, olive oil, 1/4 cup onion, garlic powder and 4 T Italian seasoning.  Kneed together and flatten out on cookie sheet(s).

 

Directions:  
First spread tomato sauce on meatzza, then begin to add toppings.  Bake at 350 for about 25 – 30 minutes, depending on how thick your “crust” is and how well you want your beef cooked.
