MEATzza with Goat Cheese

Clean eating, gluten free, grain free, low carb

In the winter we have this about once a week. All veggies, no bready crust, Meatzza with Goat Cheese, one of Kyra Williams Fitness’ clean eating recipes, keeps the carbs low, healthy fats high and will leave you full and satisfied all evening.

 

Ingredients:
16 oz ground grassfed beef
4 chicken sausages
2 medium zucchini squash
2oz herbed goat cheese
1 cup diced tomato  (canned also works, no salt added)
4 T olive oil
1/2 medium red onion, finely chopped
4 T garlic powder
6 T Italian seasoning
Handful or two of fresh basil, chopped

 

Directions:
Spray baking dish with cooking spray.  Preheat oven to 400 degrees.
Slice and process zucchini in food processor.  Add zucchini, beef, olive oil, red onion, garlic powder and Italian seasoning to a bowl and mix it together with your hands, then pat it flat in your baking dish.  Slice sausage thinly, about a 12 or so pieces to come from each link.   Distribute sausage, diced tomato, goat cheese and basil evenly on top of meat.
Bake at 400 degrees for about 25 minutes or until meat is cooked through.
