Mint Chocolate Chip Cookies
A super delicious, much healthier version of sugar cookies.
Clean eating, vegetarian, keto, low carb, gluten free, grain free
Ingredients:
1/2 cup coconut flour
1 scoop mocha mint About Time whey protein powder
1 large egg
1 small banana
3 squares of Lindt 90% dark chocolate bar (broken into tiny pieces)
4 – 5 T unsweetened original almond milk
2 T coconut oil
5 tsp stevia
1/4 tsp sea salt
1/4 tsp baking powder
1/4 tsp baking soda
Directions:
Blend flour, egg, baking powder, baking soda, stevia, vanilla, 4 T almond milk, broken up chocolate pieces and salt together. Melt coconut oil and add that as well. Mash up banana and add that. If mixture is still too crumbly, add the last T of almond milk.
Preheat oven to 350 degrees, spray baking sheet, and spoon out cookies onto sheet. This recipe should yield 10 cookies.
