Mojo Pork Bowl
Gluten free, lactose free, dairy free, clean eating recipe
This is a great thing to batch cook and have for the week since it’s so many servings.
Ingredients:
3lb boneless pork shoulder
10 oz Badia Mojo marinade
1/4 head of cabbage
4T olive oil
2 avocados
1.5 cups dry jasmine rice
1 cup fresh cilantro, chopped
4T lime juice
Extra cilantro for garnish
Directions:
Add the pork shoulder to a slow cooker with marinade and cook on low for 6-8 hours.
20-30 minutes before you are ready to serve, cook the 2 cups of rice as instructed on the package. Then stir in the chopped cilantro and lime juice before serving.
Use a quarter of a head of cabbage and chop into strips about a half in wide and are around 4-6 inches long. Sauté cabbage in skillet with olive oil until it’s tender. If you have a cast iron skillet this is the best option.
Remove pork shoulder from slow cooker and pull apart. I reserved the renderings from the slow cooker in a jar. You can use these later to add back to the pork when re-heating. I used a couple spoonfuls to add to my pup’s food and he LOVED it.
Serve in a bowl, rice on the bottom, pork, cabbage and quarter of the avocado and garnish with cilantro if you’d like.
