Paleo Blueberry Cobbler
Paleo, Gluten Free, Grain Free, Vegan, Low Carb, Clean eating recipe for a delicious dessert.
Ingredients:
1.5 pints blueberries (or about 2 cups)
1 .5 cups almond flour
4 T coconut butter
2 T maple syrup or honey
1.5 tsp vanilla
Directions:
Preheat oven to 375.
Heat 1 T of coconut butter until it’s totally liquified and use it to grease an 8 x 8 or larger baking dish.
Place berries in baking dish.
In a large bowl, combine the almond flour, 3 other melted tablespoons of coconut butter, honey and vanilla. Mix with your hands until it is all crumbly and moist. Then use your hands to distribute the topping evenly over the berries.
Put dish in the oven and bake for 20 minutes or until topping is brown and crisp. You will need to leave it longer, perhaps 30 – 40 minutes if using frozen berries.
When done enjoy with a drizzle of honey or maple syrup or with coconut milk ice cream.*
