Red Hot Summer Chicken Salad

Clean eating, gluten free, grain free
This Red Hot Summer Chicken Salad, one of Kyra Williams Fitness’ clean eating recipe, is one of my FAVORITES!!!  Toss it onto a bed of baby spinach leaves or onto a slice of Ezekiel bread and you have a delicious lunch.  Just be sure to make enough for two because you will be asked to share!

 

Ingredients:
2.5 oz boiled and shredded chicken
1/2 cup FF cottage cheese
1 ounce roasted red peppers
2 T FF mayo (you can omit, but the macros will change)
2 T hot sauce
1 T diced onion
2 tsp cajun seasoning
1 tsp garlic powder
paprika, salt and pepper to taste

 

Directions:
Shred boiled chicken.
Mix ingredients together and stir.
Serve over bed or lettuce or in Joseph’s whole wheat wrap.**
