Simple Roasted Chicken
Clean eating recipes perfect for batch cooking – my boyfriend and I make one of these everyyyyyy Monday. It’s great because we eat it fresh Monday night for dinner then he has it for lunch everyday the rest of the week.
Ingredients:
1 whole chicken
Leafy greens of choice
3 pieces sour dough bread
Ingredients for chicken rub:
.5T salt
.5T black pepper
.5T garlic powder
.5Tsp Italian seasoning
4T olive oil
Ingredients for dressing:
3 tablespoons lemon juice
1 large garlic clove, finely minced or smashed with the flat side of a knife
1/2 tsp Kosher salt
1/2 tsp Freshly ground black pepper
3/4 cup olive oil
Zest from ½ lemon
1 tbs freshly chopped basil
1/4 cup freshly grated parm
Directions for chicken:
Mix the dry ingredients for the chicken rub and rub thoroughly on chicken and under skin, wrap chicken in plastic wrap for 24 hours and refrigerate. Tuck the wings under the body and tie the legs together.
Preheat oven to 500 degrees. Place 3 – 4 pieces of bread in bottom of cast iron skillet. Tuck the wings under the body and tie the legs together, then place chicken on top of bread, breast side up. Drizzle 2T of olive oil all over the top of the chicken. Roast for 30 minutes, then turn it over, drizzle the other 2T of olive oil and roast for another 15 minutes. Remove skillet from oven and wrap entire skillet with tin foil and let sit at room temperature for 30 minutes.
Cut on cutting board along with bread to make croutons. Serve on salad greens and add dressing.
Directions for dressing:
Mix the ingredients in food processor until watery consistency.
