Turkey Sweet Potato Spinach Muffins
These Turkey Sweet Potato Spinach Muffins, one of Kyra Williams Fitness’ clean eating recipes, are one of the recipes I recommend for batch cooking more than anything else. These are a whole-food on the go snack that it perfect to bring anywhere or eat anytime.
Clean eating, Paleo, Primal, gluten free, grain free, lactose and dairy free
Ingredients:
1 lb 99% lean ground turkey breast
1 large sweet potato, quartered and cooked
2 cups spinach
3 Sprigs Rosemary
3 cloves of garlic, crushed or minced
1 egg, beaten
1/4 tsp sea salt
Cooking Spray
Directions:
Preheat oven to 375 degrees.
In a food processor combine all ingredients and pulse until everything is well blended. If you don’t have a food processor, mash the sweet potato and combine all ingredients well.
Spray a 12-muffin tray with cooking spray or use paper cuffs. Evenly divide mixture among tins. Bake for 30 minutes.
