Turkey and Veggie Meatloaf

Clean eating, low carb, gluten free, grain free
Kind of like a casserole because it’s your veggies and meat in one. This turkey and veggie meatloaf, one of Kyra Williams Fitness’ clean eating recipes,  could be made into muffins for on-the-go snacks.

 

Ingredients:
1 package (20 oz) 99% lean ground turkey breast
2 medium zucchini squash (green)
1 medium summer squash (yellow)
1 cup fresh mushrooms
1/3 cup diced onion
12 T Fat free parmesan cheese topping
4 Tbsp olive oil
4 Tbsp Worcestershire sauce
2 Tbsp Italian seasoning
2 Tbsp garlic powder
Sea salt & freshly ground black pepper to taste

 

Directions:
Slice zucchini and squash process in food processor very finely.
Process onion and mushrooms as well.
Mix all ingredients in a large bowl and spread evenly into a baking dish.
Cook at 450 for 40 minutes.
