Twice Baked Sweet Potato Mash
Cook in bulk for a perfect post workout snack with some protein powder.

Ingredients:
4-5 sweet potatoes (approximately 16 ounces)
3 T coconut milk (full fat – the kind from a can)
3 tsp vanilla extract
1 tsp sea salt
cinnamon to taste
coconut oil cooking spray
Directions:
Cook sweet potatoes until they are fork tender. You can do it wrapped in foil in the oven or boil them.
Preheat oven to 350 degrees and spray a baking dish with cooking spray.
Remove skins from potatoes and place them in a food processor with coconut milk, salt and cinnamon. Process or blend until sweet potato is completely smooth, then add to baking dish and bake for 25 minutes. Set oven on broil for 5 minutes to make it a little brown on top.
