Sweet Potato Pancakes
Clean eating breakfast recipe perfect for batch cooking
Ingredients
- 2 whole eggs
- 4 oz sweet potato cooked, skin removed
- 2 tsp maple syrup
- .5 tsp vanilla extract
- .5 tsp baking soda
- .5 tsp baking powder
- .25 tsp cinnamon ground
- Spray coconut oil for pan
Instructions
- Mix in a food processor or by hand, thoroughly, until even. You could even mash these together with your hands.
- Separate into 2 – 4 pancakes, depending on how many you want, just make sure they are no more than a half inch thick to begin because they will take longer to cook through.
- Place on oiled frying pan over medium heat and let sit for 3 – 4 min before carefully flipping onto the other side. You may have to flip for 2 more minutes on each side to ensure they cook all the way through but do not burn on the outsides.
