Asparagus and Broccolini Fries
Such a great side dish when you want a finger food to dip, but you also want to increase the nutrients in your meal.
Ingredients
- 1 lb asparagus ends trimmed
- 1 lb broccolini ends trimmed
- 2 T olive oil
- 2 T parmesan grated
- 2 tsp lemon zest
- 3/4 tso kosher salt
- 1/3 tsp black pepper
Instructions
- Preheat oven to 450 degrees. Toss broccolini, asparagus, olive oil and salt and pepper on a rimmed backing sheet.
- Roast on top rack until stalks are tender, about 15 minute.
- Remove from oven and sprinkle with lemon zest and parmesan.
