Asparagus and Broccolini Fries

Such a great side dish when you want a finger food to dip, but you also want to increase the nutrients in your meal.

Ingredients
  

  • 1 lb asparagus ends trimmed
  • 1 lb broccolini ends trimmed
  • 2 T olive oil
  • 2 T parmesan grated
  • 2 tsp lemon zest
  • 3/4 tso kosher salt
  • 1/3 tsp black pepper

Instructions
 

  • Preheat oven to 450 degrees. Toss broccolini, asparagus, olive oil and salt and pepper on a rimmed backing sheet.
  • Roast on top rack until stalks are tender, about 15 minute.
  • Remove from oven and sprinkle with lemon zest and parmesan.
