BLT Salad

I made this because I was craving a BLT but knew I wanted more veggies and needed some protein to actually fill me up. This hit the spot and kept me full for hours.

Ingredients
  

  • 4 oz cooked chicken breast (skinless)
  • 2 pieces cooked bacon
  • 5 oz romaine, chopped
  • 2 oz cherry tomatoes, sliced in half
  • 1 oz diced red onion
  • 1.5 oz slice sourdough bread
  • 2 tsp honey
  • 2 T dijon mustard

Instructions
 

  • Cook your chicken and bacon to your liking. While those are cooking, make your salad.
  • Chop your romaine, red onion, tomatoes and add them to a bowl.
  • Drizzle your sourdough bread with olive oil then toast. Once that is done toasting, chop into small croutons. Stale bread works best for this.
  • Combine your honey and mustard and stir together well. Add a couple teaspoons of warm water to help thin it out.
  • Once your chicken and bacon are ready, chop them up and add them to your salad. Then toss in the croutons, drizzle with your honey mustard and enjoy.
