BLT Salad
I made this because I was craving a BLT but knew I wanted more veggies and needed some protein to actually fill me up. This hit the spot and kept me full for hours.
Ingredients
- 4 oz cooked chicken breast (skinless)
- 2 pieces cooked bacon
- 5 oz romaine, chopped
- 2 oz cherry tomatoes, sliced in half
- 1 oz diced red onion
- 1.5 oz slice sourdough bread
- 2 tsp honey
- 2 T dijon mustard
Instructions
- Cook your chicken and bacon to your liking. While those are cooking, make your salad.
- Chop your romaine, red onion, tomatoes and add them to a bowl.
- Drizzle your sourdough bread with olive oil then toast. Once that is done toasting, chop into small croutons. Stale bread works best for this.
- Combine your honey and mustard and stir together well. Add a couple teaspoons of warm water to help thin it out.
- Once your chicken and bacon are ready, chop them up and add them to your salad. Then toss in the croutons, drizzle with your honey mustard and enjoy.
