Buffalo Chicken Dip
This recipe marries comfort and indulgence with health and deliciousness. This buffalo chicken dip is high protein and none of your friends will ever know how healthy it really is!
Ingredients
- 2 lbs chicken breast measure raw
- 4 green onions chopped
- 1 large jalapeno finely diced
- 8 oz blue cheese crumbs
- 1 lb roasted red peppers diced
- 12 oz plain fat free Greek yogurt
- 12 oz red onion, diced
- salt and pepper to taste
Instructions
- Cook chicken breast in an oven at 350 degrees for 30 minutes or has reached an internal temperature of 165 degrees. Season with salt and pepper. Once cooked, shred apart.
- Mix together shredded chicken and the rest of the ingredients in a bowl.
- Add additional salt and pepper to taste if you'd like.
- Serve with crackers or in lettuce cups.
