Greek Inspired Salad
This fresh and healthy Greek Inspired Salad combines cucumber, cherry tomatoes, and red bell pepper with a simple olive oil and red wine vinegar dressing, seasoned with oregano, sumac, sea salt, and black pepper for a light Mediterranean-style dish.
Ingredients
- 1 large cucumber, quarter and sliced thin (216g)
- 1 medium chopped red bell pepper
- .5 pint red cherry tomatoes
- .5 pint orange cherry tomatoes
- 2 oz feta cheese
- 1 T olive oil
- 1 T red wine vinegar
- .5 tsp dried oregano
- .5 tsp sumac
- .5 tsp sea salt
- .25 tsp ground black pepper
Instructions
- Place all chopped veggies and feta in a bowl.
- Combine olive oil, vinegar, spices and mix together then pour over veggies. Toss then let sit for 10+ minutes.
