This fresh and healthy Greek Inspired Salad combines cucumber, cherry tomatoes, and red bell pepper with a simple olive oil and red wine vinegar dressing, seasoned with oregano, sumac, sea salt, and black pepper for a light Mediterranean-style dish.

Ingredients
  

  • 1 large cucumber, quarter and sliced thin (216g)
  • 1 medium chopped red bell pepper
  • .5 pint red cherry tomatoes
  • .5 pint orange cherry tomatoes
  • 2 oz feta cheese
  • 1 T olive oil
  • 1 T red wine vinegar
  • .5 tsp dried oregano
  • .5 tsp sumac
  • .5 tsp sea salt
  • .25 tsp ground black pepper

Instructions
 

  • Place all chopped veggies and feta in a bowl.
  • Combine olive oil, vinegar, spices and mix together then pour over veggies. Toss then let sit for 10+ minutes.
