This clean eating pasta salad is great to prep for lunches or to make for dinner. It does make great leftovers though!
Pasta Salad
Pasta and salad together makes the best of both worlds!
Ingredients
- 12 oz raw chicken breasts
- 2 T Italian seasoning
- 4 oz uncooked pasta of choice
- 4 oz baby spinach
- 4 oz summer squash quartered and sliced thin
- 4 oz zucchini quartered and sliced thin
- 5 oz cherry tomatoes halved
- 2 T dressing of choice
- Salt and pepper to taste
Instructions
- Preheat oven to 450 degrees.
- Toss chicken breasts in 2T Italian seasoning.
- Bake for 15-18 minutes, or until internal temperature reaches 165 degrees at thickest part of breast.
- While chicken is baking, cook pasta per directions on box.
- Add all ingredients into two large bowls. Spinach will wilt a bit. Mix everything together and add dressing of choice.
- We enjoyed this with Primal Kitchen caesar dressing we thinned out 1:1 with water.
- Add salt and pepper to season as you wish.

For this recipe we used 1T Primal Kitchen caesar dressing per person, and mixed it 1:1 with water to dilute it and make it go further, and the nutrition facts reflect this.
