Sweet Potato Pancakes

Clean eating breakfast recipe perfect for batch cooking

Ingredients
  

  • 2 whole eggs
  • 4 oz sweet potato cooked, skin removed
  • 2 tsp maple syrup
  • .5 tsp vanilla extract
  • .5 tsp baking soda
  • .5 tsp baking powder
  • .25 tsp cinnamon ground
  • Spray coconut oil for pan

Instructions
 

  • Mix in a food processor or by hand, thoroughly, until even.  You could even mash these together with your hands.  
  • Separate into 2 – 4 pancakes, depending on how many you want, just make sure they are no more than a half inch thick to begin because they will take longer to cook through.
  • Place on oiled frying pan over medium heat and let sit for 3 – 4 min before carefully flipping onto the other side.  You may have to flip for 2 more minutes on each side to ensure they cook all the way through but do not burn on the outsides.
