Bacon and Egg Muffins

- 12 eggs
- 1 cup egg whites
- 6 pieces bacon previously cooked
- 1/2 cup mushrooms diced
- 1 whole red bell pepper diced
- 2 cups spinach chopped
- salt and pepper to taste
- spray olive oil
Preheat oven to 350 degrees.
Spray muffin tin with olive oil.
Chop ingredients and beat eggs in a medium bowl, adding the rest of the ingredients and mix. Pour mixture into muffin tin.
Bake for 18-20 minutes. Set aside until cool before storing.
