Pre-heat oven to 350 degrees. Place bacon strips in a 9x13 baking dish and bake bacon for about 15 minutes. It should be cooked, but not super crispy. Allow grease to remain in dish.
Chop your vegetables into small pieces. Chop bacon as well.
Beat your 6 eggs, adding in your egg whites, then stir in vegetables, bacon and add salt and pepper to taste. Pour into grease coated baking dish.
Bake at 350 for 35 minutes until eggs have set.
I would recommend pairing this with a protein shake on the go and some fruit to increase the protein and carbs.
