Broccoli and Carrot Salad

Simple salad with loads of immune boosting vitamins

Ingredients
  

  • 12 oz chicken breast cooked
  • 3 cups broccoli chopped
  • 4 oz carrots shredded
  • 1/8 large red onion chopped
  • 1/4 cup dried, unsweetened cranberries
  • 1/4 cup pumpkin seeds
  • 4 pieces bacon cooked, chopped
  • 2 T light sour cream
  • 1 T apple cider vinegar
  • salt and pepper to taste

Instructions
 

  • Make sure your bacon and chicken are cooked.
  • Chop all of your ingredients, except sour cream and ACV, and divide into two bowls.
  • Mix the sour cream and apple cider vinegar, add salt and pepper to taste, and divide between the two salads. Mix and serve.
