Italian Wedding Soup

A super simple recipe to warm your body on a cold day. This clean eating Italian Wedding Soup is healthy and delicious. Make a big batch and bring it for lunch as leftovers.

Ingredients
  

  • 1 lb 93/7 ground beef
  • 1 egg
  • .33 cup bread crumbs
  • .33 cup parmesan cheese
  • 2 cloves garlic minced
  • 1.5 T Italian seasoning
  • .5 tsp salt
  • .25 tsp black pepper
  • 1 T olive oil
  • 1 cup carrots shredded
  • 1 cup celery diced
  • 1 cup onion diced
  • 6 oz spinach
  • 2 garlic cloves minced
  • 8 oz chicken bone broth
  • 4 oz mini pasta

Instructions
 

  • Combine meatball ingredients in a large bowl with hands. 
  • Form into 40 small meatballs.
  • Preheat frying pan over medium high heat. 
  • Spray pan with olive oil and fry the meatballs in batches, cooking for about 2 minutes, flip, then another 2 minutes to get color on the outside. 
  • In a large pot, heat olive oil over medium high, then add garlic, carrots, onion and celery and cook for about 10 minutes, or until vegetables are tender. 
  • Add bone broth to pot and bring to a boil. Then add pasta and pre-cooked meatballs. 
  • Reduce heat to simmer, cover with a lid and cook for 10-15 minutes until pasta is cooked. 
  • Stir in spinach to wilt, then serve.

Omit pasta and increase meat to 1.5lbs and add one additional egg.
