Italian Wedding Soup
A super simple recipe to warm your body on a cold day. This clean eating Italian Wedding Soup is healthy and delicious. Make a big batch and bring it for lunch as leftovers.

- 1 lb 93/7 ground beef
- 1 egg
- .33 cup bread crumbs
- .33 cup parmesan cheese
- 2 cloves garlic minced
- 1.5 T Italian seasoning
- .5 tsp salt
- .25 tsp black pepper
- 1 T olive oil
- 1 cup carrots shredded
- 1 cup celery diced
- 1 cup onion diced
- 6 oz spinach
- 2 garlic cloves minced
- 8 oz chicken bone broth
- 4 oz mini pasta
Combine meatball ingredients in a large bowl with hands.
Form into 40 small meatballs.
Preheat frying pan over medium high heat.
Spray pan with olive oil and fry the meatballs in batches, cooking for about 2 minutes, flip, then another 2 minutes to get color on the outside.
In a large pot, heat olive oil over medium high, then add garlic, carrots, onion and celery and cook for about 10 minutes, or until vegetables are tender.
Add bone broth to pot and bring to a boil. Then add pasta and pre-cooked meatballs.
Reduce heat to simmer, cover with a lid and cook for 10-15 minutes until pasta is cooked.
Stir in spinach to wilt, then serve.

Omit pasta and increase meat to 1.5lbs and add one additional egg.
