Pork tenderloin is a great, low fat, source of protein. This is a great way to cook your pork as the protein with many dishes. Just change up the spice blend to change up the flavor.
Preheat oven to 250 degrees F. While the oven is preheating, let the pork tenderloin sit out at room temp for 10-15 minutes to take off the chill. Mix 2T avocado oil with the seasonings to create a “paste.”
Pat the meat dry with a paper towel. Rub the pork to coat it evenly with the oil/ spice blend.
Place the pork tenderloin on a wire rack over a baking sheet and place in the oven.
Cook the pork in the oven until the internal temperature reaches 140 degrees Fahrenheit, about 30-40 minutes. Use an oven safe kitchen thermometer for accurate results.
While the pork is resting, heat a large cast-iron skillet over medium-high heat. Add 1-2 tablespoons of cooking oil to the pan. Add the pork tenderloin to the pan and sear on all sides until the exterior is golden brown and crisp, about 1-2 minutes per side.
Remove the pork from the heat and let it rest for 5 minutes before slicing and serving.
