pork tenderloin

avocado oil

bell pepper
1
small yellow onion

spinach
salt and pepper to taste
Instructions
Heat a large skillet over medium-high heat.
Sprinkle pork with salt and pepper.
Add avocado oil to pan; swirl to coat. Place pork in pan and cook for 5 minutes.
Reduce heat to medium then turn pork over.
Add onions, garlic, and bell peppers and cook 5 minutes or until peppers are starting to become tender, then add spinach and cook 2 more minutes.
Slice pork into medallions.
Serve over rice and top with salsa.
