Bacon and Egg Muffins
This quick recipe is perfect for batch cooking on-the-go breakfasts that are high in protein and will add more vegetables to your diet.
Ingredients
- 12 eggs
- 1 cup egg whites
- 6 pieces bacon previously cooked
- 1/2 cup mushrooms diced
- 1 whole red bell pepper diced
- 2 cups spinach chopped
- salt and pepper to taste
- spray olive oil
Instructions
- Preheat oven to 350 degrees.
- Spray muffin tin with olive oil.
- Chop ingredients and beat eggs in a medium bowl, adding the rest of the ingredients and mix. Pour mixture into muffin tin.
- Bake for 18-20 minutes. Set aside until cool before storing.
