Bacon and Egg Muffins

This quick recipe is perfect for batch cooking on-the-go breakfasts that are high in protein and will add more vegetables to your diet.

Ingredients
  

  • 12 eggs
  • 1 cup egg whites
  • 6 pieces bacon previously cooked
  • 1/2 cup mushrooms diced
  • 1 whole red bell pepper diced
  • 2 cups spinach chopped
  • salt and pepper to taste
  • spray olive oil

Instructions
 

  • Preheat oven to 350 degrees.
  • Spray muffin tin with olive oil.
  • Chop ingredients and beat eggs in a medium bowl, adding the rest of the ingredients and mix.  Pour mixture into muffin tin.
  • Bake for 18-20 minutes. Set aside until cool before storing.
