Broccoli and Carrot Salad
Simple salad with loads of immune boosting vitamins
Ingredients
- 12 oz chicken breast cooked
- 3 cups broccoli chopped
- 4 oz carrots shredded
- 1/8 large red onion chopped
- 1/4 cup dried, unsweetened cranberries
- 1/4 cup pumpkin seeds
- 4 pieces bacon cooked, chopped
- 2 T light sour cream
- 1 T apple cider vinegar
- salt and pepper to taste
Instructions
- Make sure your bacon and chicken are cooked.
- Chop all of your ingredients, except sour cream and ACV, and divide into two bowls.
- Mix the sour cream and apple cider vinegar, add salt and pepper to taste, and divide between the two salads. Mix and serve.
