Italian Wedding Soup
A super simple recipe to warm your body on a cold day. This clean eating Italian Wedding Soup is healthy and delicious. Make a big batch and bring it for lunch as leftovers.
Ingredients
- 1 lb 93/7 ground beef
- 1 egg
- .33 cup bread crumbs
- .33 cup parmesan cheese
- 2 cloves garlic minced
- 1.5 T Italian seasoning
- .5 tsp salt
- .25 tsp black pepper
- 1 T olive oil
- 1 cup carrots shredded
- 1 cup celery diced
- 1 cup onion diced
- 6 oz spinach
- 2 garlic cloves minced
- 8 oz chicken bone broth
- 4 oz mini pasta
Instructions
- Combine meatball ingredients in a large bowl with hands.
- Form into 40 small meatballs.
- Preheat frying pan over medium high heat.
- Spray pan with olive oil and fry the meatballs in batches, cooking for about 2 minutes, flip, then another 2 minutes to get color on the outside.
- In a large pot, heat olive oil over medium high, then add garlic, carrots, onion and celery and cook for about 10 minutes, or until vegetables are tender.
- Add bone broth to pot and bring to a boil. Then add pasta and pre-cooked meatballs.
- Reduce heat to simmer, cover with a lid and cook for 10-15 minutes until pasta is cooked.
- Stir in spinach to wilt, then serve.
