Mediterranean Farro Salad
Mediterranean spiced farro salad is a wonderful side dish with pork, steak, lamb chops or fish. You can also make a big batch to have as part of your lunch all week.
Ingredients
- 1 cup dry farro
- 4 oz cucumber
- 2.5 oz radish
- 2 oz red onion
- 1 T olive oil
- 1 T agave
- 3 T lemon juice
- .5 tsp cumin
- .5 tsp coriander
- .5 tsp chili powder
- .25 cup fresh parsley
- 2 oz feta cheese
- salt and pepper to taste
Instructions
- Bring two cups water to a boil in a saucepan. Add one cup of farro, cover with a lid and let simmer on low-medium for 20-25 minutes until water is absorbed.
- Chop vegetables.
- Measure and add spices, vegetables and all ingredients and mix.
