Mediterranean Farro Salad

Mediterranean spiced farro salad is a wonderful side dish with pork, steak, lamb chops or fish. You can also make a big batch to have as part of your lunch all week.

Ingredients
  

  • 1 cup dry farro
  • 4 oz cucumber
  • 2.5 oz radish
  • 2 oz red onion
  • 1 T olive oil
  • 1 T agave
  • 3 T lemon juice
  • .5 tsp cumin
  • .5 tsp coriander
  • .5 tsp chili powder
  • .25 cup fresh parsley
  • 2 oz feta cheese
  • salt and pepper to taste

Instructions
 

  • Bring two cups water to a boil in a saucepan. Add one cup of farro, cover with a lid and let simmer on low-medium for 20-25 minutes until water is absorbed.
  • Chop vegetables. 
  • Measure and add spices, vegetables and all ingredients and mix.
