Mediterranean Meatballs

Make these meatballs for dinner, but prepare extra. They make great lunches and snacks.

Ingredients
  

  • 1.5 lb 93/7 ground beef
  • 1 whole egg, beaten
  • 2 garlic cloves, minced
  • .25 cup fresh parsley chopped,
  • 2 T tomato paste
  • 1 T dried oregano
  • 1 tsp dried mint
  • 1 tsp salt
  • .5 tsp ground black pepper

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix all ingredients in a bowl.
  • Form 24 equal sized meatballs and bake on baking sheet for 20 – 25 minutes.
