Mediterranean Meatballs
Make these meatballs for dinner, but prepare extra. They make great lunches and snacks.
Ingredients
- 1.5 lb 93/7 ground beef
- 1 whole egg, beaten
- 2 garlic cloves, minced
- .25 cup fresh parsley chopped,
- 2 T tomato paste
- 1 T dried oregano
- 1 tsp dried mint
- 1 tsp salt
- .5 tsp ground black pepper
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients in a bowl.
- Form 24 equal sized meatballs and bake on baking sheet for 20 – 25 minutes.
