Reverse Sear Mexican Spiced Pork Tenderloin
Pork tenderloin is a great, low fat, source of protein. This is a great way to cook your pork as the protein with many dishes. Just change up the spice blend to change up the flavor.
Ingredients
- 1.5 lb pork tenderloin
- 2 tsp salt
- 2 tsp chili powder
- 1.5 tsp cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp garlic powder
- .5 tsp onion powder
- .5 tsp black pepper
- .25 tsp cayenne pepper
- 3 T avocado oil
Instructions
- Preheat oven to 250 degrees F. While the oven is preheating, let the pork tenderloin sit out at room temp for 10-15 minutes to take off the chill. Mix 2T avocado oil with the seasonings to create a “paste.”
- Pat the meat dry with a paper towel. Rub the pork to coat it evenly with the oil/ spice blend.
- Place the pork tenderloin on a wire rack over a baking sheet and place in the oven.
- Cook the pork in the oven until the internal temperature reaches 140 degrees Fahrenheit, about 30-40 minutes. Use an oven safe kitchen thermometer for accurate results.
- While the pork is resting, heat a large cast-iron skillet over medium-high heat. Add 1-2 tablespoons of cooking oil to the pan. Add the pork tenderloin to the pan and sear on all sides until the exterior is golden brown and crisp, about 1-2 minutes per side.
- Remove the pork from the heat and let it rest for 5 minutes before slicing and serving.
